With the weather outside being a chilly 4 degree's today I decided to make a crockpot ratatouille that will use of all of my leftover vegetables that are currently turning brown in the fridge. Its so easy to make and really yummy with couscous!
You will need...
Mushrooms
Eggplant (cubbed)
Fresh tomatoes (diced)
Onions
Garlic
Green peppers
Oregano
Put it all in a crock pot and cook it on low for about 8 hours. And thats it! Like I mentioned above, it tastes great over couscous but pasta, rice, or some crusty bread is also really good.
