This is why I am not a professional landscaper!

On Mondays and Thursdays I work from home. I looooove it. I do part of the work the night before and then leisurely finish up what I have to do the next day. So today I woke up did a little work and then felt motivated to do something. I started with the 10 loads of laundry that needed done. I got 2 loads in and was bored. Who has time to wait around for 30 minutes between loads? So next on my list was to bake Jason some chocolate chip cookies, Jason LOVES chocolate chip cookies. I always try a new recipe because I am always in search of the perfect chocolate chip cookie. I tried this recipe today from all-recipes. I am not usually a fan of all recipes but the recipe got good reviews. The cookies came out okay. Better than some I've made but not quite as good as others. I had to use half white chocolate and half milk chocolate chips.

Pioneer Woman has a recipe that includes instant coffee in her chocolate chip cookies. I reeeally wanted to try and make her version but I didn't have any instant coffee. Maybe Next Thursday!

So after my domestic extravaganza I decided to cut some of the grass to surprise Jason when he gets home. He hasn't had a chance to cut it since he's gotten back from Ca. Between 98 degree days and crazy thunderstorms there just hasn't been a day to do it. So i went out started up the mower and was just walking back and forth back and forth. Cutting grass is so boring to me! So I get by our sickle pear tree and keep on cutting when all of a sudden I start slipping and slidding all over the place on the pears on the ground. It was probably a hilarious sight for all of my neighbors. Thank goodness I didn't fall of I probably wouldn't be laughing now!

Hopefully Jason is happy when he gets home and finds not only grass that doesn't need cut but chocolate chip cookies too!

Tomorrow I have decided that I am going to try and can my own salsa. We have a bunch of tomatoes from the garden and I have already froze so many that I want to try something different. I found a couple of recipe's off of Recipe Zaar that look good but I am still looking. If anybody has any good salsa recipes that work for canning feel free to send them my way!

The perfect lunch

Today was a yucky rainy day outside. However I did manage to venture out with a co-worker for lunch. It was the most perfect lunch ever courtesy of Whole Foods and Starbucks.

The perfect vegetable roll. Carrots, avocado, cucumber, bliss.

And what beverage pairs best with sushi? Well a venti white chocolate mocha with soy of course.

And of course I haven't taken any pictures of the garden. One day. One day. But until then I will keep you in suspence. Due to the yucky weather and sleep deprevation I don't see today being the day that garden pictures are going to happen. Paco the sweet little, calm chihuahua that he is has been terrified of the severe storms we have been having at night so me being the softy that I am has let him sleep in bed instead of his crate. By sleep in bed I mean pace all night, shake, and lick my face. Hopefully tonight it will not storm and I will have my sweet, calm, chihuahua who loves to sleep through the night back.

I'm too cheap to go to the doctor but not to make Key Lime Pie

Thanks to a wonderful sinus infection I really don't have anything interesting to post. For the past week my life has involved 5 boxes of kleenex, nasal spray, vicks vapor rub, and sugar free jello. Ahh, the life of a 80 year old man. It takes alot for me to break down and go to the doctor. I havent been to the doctor since I was probably 18 or 19- Im 23 now. So I decided that maybe this time I needed a little antibiotic boost. So I call my doctor and low and behold he can't fit me in until next week. So I call the Med Express clinic which can take me whenever. The catch- its a $20 doctors visit not including any procedure or additional fee's and not including my $20 perscription fee. I've decided my sinus's are not worth $40 or more dollars. So I will be trying some homeopathic remedies and taking a bunch of vitamins. If all else fails I will go to the doctor next week. But enough about sinus infections how about an amazing pie recipe!

Easiest ever Low Fat Key Lime Pie
1 container Fat free cool whip
1 container fat free lime yogurt
1 package sugar free lime Jell-O
Bring 1 cup of water to a boil and add Jell-O mix. Once jello is disolved add yogurt and mix thoroughly. Next fold in cool whip to Jell-O/yogurt mixture. Let mixture cool in refridgerator for 10-15 minutes then add to a graham cracker crust. Return pie to refrigerator for about 2 hours.

This pie is amazing and does not taste fat free! I have also done this with lemon Jell-O/yogurt. The possibilities are endless! I think I may try this with strawberry Jell-O/Yogurt and top it with some fresh strawberries- make it look like I actually have culinary abilities. This recipe costs about 4 dollars for the entire pie. To make it even more frugal and entirely fat free exclude the pie crust and put it in a pretty bowl or casserole dish and it will be a great key lime mousse!

Blog Neglect!

I have been very neglectful of my blog lately! But in my defense I have also been busy doing a whole lot of nothing in particular. But to make up for my lack of commitment to my blog I have given it a face lift. As you can see I changed the name, I think the old name reflected the mood that I generally feel (like im swimming in jello). This one is just pretty (like the new background) and so I decided to keep it after much experimentation.

So anyway... Jason has been in New York for a week now and I am slowly being depleated of life. When I was in college I took a philosophy class and my professor told us about a writing by Aristotle that said that people are just one arm and one leg and life is difficult for them. But when they meet their soul mate they become whole and life is prosperous and joyful. Well thats basically Jason and I. When he's out of town life is harder. But I have been keeping very busy! I have been going out with friends and shopping and selling stuff on craigslist (Yay for getting rid of my futon from college!) So my friend is having a party this Saturday and it has a tropical theme. I told my friend I would bring a dessert and started racking my brain for something that is 1. cheap 2. easy 3. yummy! So finally I remembered the easiest yummiest and semi cheapest dessert I know how to make...
Tropical Fruit Salsa!

You will need...

  • 2 Kiwi's
  • 1 Container of blueberries
  • green or red grapes
  • strawberries
  • 1 can of dole tropical fruit medley
  • 1 Tsp Brown Sugar
  • Tsp of Vanilla
  • 1 Lime

Drain the can of fruit medley and set juice aside. Dice all of the fruit, except bluberries (which remain whole) and put into serving bowl.

Next combine sugar vanilla and fruit juice and stir until sugar disolves. Pour mixture over fruit. Cut lime into wedges, use 2 wedges to squeeze over salsa and 2 for garnish...

And Voila Fruit Salsa!

I serve it with tortilla chips that I cut into strips sprinkle with cinnamon and sugar and bake for 10 mins at 350 degrees. This recipe is so easy and great. Everybody always loves it when I take it to pot lucks and parties.

I have noticed that this blog has taken on a food theme. Thats mainly because I eat everyday and I really enjoy it! But soon I hope to add some posts about my house and design, upcoming trips I will be taking, things I love and am inspired by, and possibly even some daily doses of cuteness via my dogs paco and heidi. But until then I hope you enjoy the recipes!
